This recipe comes from my long time friend Kathy who I introduced to the man who became her husband so many years ago.
1 onion, chopped
2 cloves garlic, chopped
8 oz. mushrooms, sliced
1 C. pearl barley
3 C. chicken broth
dash of parsley
Saute onion, garlic and mushrooms in butter. Add barley and continue cooking until the barley is browned. Add broth and parsley, cover and simmer on low for about 25 minutes or until the liquid is absorbed. Serves 6.
