Garlic Bread

I usually serve this side dish with my Paella recipe. It goes well with spaghetti served with my Spaghetti Sauce recipe too!

½-¾ loaf French bread, thickly sliced
6-12 cloves garlic, finely chopped
2 oz. butter
1 T. olive oil
grated Parmesan cheese
paprika

Melt the butter and olive oil in a skillet, lightly saute the garlic. Remove from the heat and dip the face of each piece of bread into the butter and garlic mix to get an even coating of butter and garlic. Sprinkle with Parmesan cheese and top with a sprinkling of paprika. Place on a cookie sheet. (This may be prepared ahead, and covered with plastic wrap until the main course is almost done.) To finish, broil 3 to 5 minutes until the tops just begin to brown. I guarantee you will burn them every time if you don't carefully watch them! Cover with aluminum foil and keep warm until time to serve. (Allow 2 pieces per serving.)

Note: The result is best if you go very lightly on the Parmesan cheese and paprika. Use as much garlic as you like but do not allow the garlic to become browned.

Warning! Watch your broiling carefully! Every time I try to multi-task I end up burning my garlic bread!
