Relleno means "stuffed" in Spanish, so chiles rellenos are stuffed chiles. This simple recipe reproduces much of the taste of traditional chiles rellenos but without any serious labor or preparation time.
6 eggs
1 T. flour
¼ t. salt
¼ t. pepper
1 can whole green chiles, seeded and rinsed
½ lb. sliced jack cheese (or mild cheddar cheese)
Separate eggs. Beat egg whites until stiff. Mix flour, salt and pepper with egg yolks and fold into whites. Pour half of mixture into greased 9x13x2 inch casserole dish. Slice open chiles and lay them flat in the casserole. Cover with cheese slices and then remaining egg mixture. Bake at 350° for 25 minutes.
Makes about 9-12 servings depending on size.
