Shrimp Scampi

1½ lb. raw medium shrimp
¼ C. butter or margarine
½ C. olive oil
8 shallots, chopped very fine (about ¾ C.)
4 cloves garlic, chopped fine
1 C. canned stewed tomatoes (optional)
½ C. mushrooms, sliced
1 t. salt
1 dash pepper
1/3 C. lemon juice
¼ C. parsley, chopped

Shell and devein the shrimp. To butterfly, split each shrimp lengthwise from head to tail, leaving a thin part connecting the halves and leave intact at tail. Saute the shallots and garlic in hot butter and oil, stirring for 3 minutes. Add tomatoes (optional) and mushrooms. Cook, stirring, 5 minutes longer. Add salt, pepper, lemon, 2 T. parsley and the shrimp and toss to mix well. Broil 4 or 5 inches from the heat for 10 minutes, or just until the shrimps are tender. Sprinkle with the rest of the parsley and serve.

Makes 3-4 servings.
