Roasted Chicken with Rice Stuffing

1 whole chicken with giblets
1 C. brown rice, cooked
4 strips bacon
1 onion, diced
1 C. raisins
¼ C. sherry
¾ t. salt
pepper & nutmeg to taste

Fry bacon until crisp and crumble into rice. Saute onion in bacon grease until it softens and add to rice. Saute the giblets, dice them and add to rice. Add the remaining ingredients to the rice mixture, mix and stuff the chicken with it. Preheat oven to 450°. Place stuffed chicken on a rack over a cookie sheet or casserole, put it in the oven and reduce the temperature to 350°. Baste occasionally and cook for 60-90 minutes until done.
