Healthiest Easiest Chicken

You can't cook chicken much easier or healthier than this! The pure simple taste of chicken comes through in this recipe, with the pepper flakes rescuing it from blandness.

chicken breasts, thighs or legs, skinless, bone in
red pepper flakes, to taste

I recommend using a wire rack over a cookie sheet because it keeps the chicken out of any grease that comes from the cooking.

Preheat oven to 350°. Remove as much fat as possible from the chicken pieces. Place the chicken on an aluminum covered cookie sheet, with or without the rack, and put it in the oven. Cook for about 35-45 minutes turning occasionally. Sprinkle with pepper flakes on both sides during the last half of cooking.

I recommend serving this dish with my Mock French Fries for a doubly low fat meal.
