Quick Brown Sauce & Mushroom Sauce

2 T. butter
1 med. onion, finely chopped
¼ C. flour
2 C. beef bullion stock
3 T. tomato paste or pureé
¼ t. salt
dash pepper

In a pot, sauté onion in butter until browned. Blend in flour, stirring vigorously. Cook slowly for 5 minutes. Add stock, tomato pureé, salt and pepper. Cook slowly, stirring constantly for 5-10 minutes.

Makes about 2 cups.

Mushroom Sauce

2 C. brown sauce
8 oz. mushrooms, grated
butter (as required)

Make brown sauce above. Saute grated mushrooms in butter. Add to brown sauce before the final 5-10 minutes cooking step.
