Soufflé Gran Marnier

2 C. milk
¾ sugar
2 oz. butter
1/3 C. flour
2 oz. Gran Marnier
5 egg yolks
7 egg whites
butter & sugar to coat dish

Or half of the above ingredients, using 3 egg yolks and 4 egg whites.

Beat egg whites until stiff and set aside. Heat milk, add sugar and boil. Melt the butter, mix with flour and add to milk, stir. Remove from heat and add liqueur off fire. Beat egg yolks until lemon colored and add to milk, stir. Fold in the egg whites. Pour into a buttered, sugared soufflé dish and bake in a 400° oven for 20 to 25 minutes. Do not disturb while baking or the soufflé will collapse! Serve hot.
