I remember a Betty Crocker dessert that I used to really love. I they called it "Pudding 'n Cake" and it came in either chocolate or lemon. It seems they have discontinued this product. You mix the cake ingredients in the bottom of the baking dish first, then pour the pudding mix on top and carefully add boiling water. Through some magic known only to Betty Crocker, by the time it's all cooked the cake and pudding have switched places and the cake is on top!!!
I like the lemon version best. But if you're a chocoholic, go for the chocolate!
1 C. flour
¾ C. sugar
2 t. baking powder
½ t. salt
½ C. milk
2 T. melted butter (or vegetable oil)
1 t. vanilla
zest from 1 lemon (divided)
juice from 1 lemon
1 pkg. lemon pudding mix
1½ C. boiling water
Mix the flour, sugar, baking powder and salt in an ungreased 9" by 9" baking dish or cake pan. Add the milk, butter, vanilla and half the lemon zest and stir until smooth. Sprinkle the remaining lemon zest, lemon juice and pudding mix on top. (Use less lemon juice if you don't like tartness.) Carefully pour the boiling water over the top but do not stir. Bake at 350° for 40 minutes or until the top is lightly browned. Let cool 15 minutes before serving. This dessert is best when served warm. Mmmmmm!
Use only the most premium brand cocoa (like Ghirardelli) or the recipe won't taste right!

2 t. baking powder
½ t. salt
½ C. milk
2 T. melted butter (or vegetable oil)
1 t. vanilla
1 C. chopped walnuts (optional)
1 C. brown sugar
¼ C. cocoa
1¾ C. boiling water
Mix the flour, 3/4 C. sugar, 2 T. cocoa, baking powder and salt in an ungreased 9" by 9" baking dish or cake pan. Add the milk, butter, vanilla and optionally the walnuts, then stir until smooth. Sprinkle the 1 C. brown sugar and 1/4 C. cocoa on top. Carefully pour the boiling water over the top but do not stir. Bake at 350° for 40 minutes or until the top is lightly browned. Let cool 15 minutes before serving. Serve warm.
